Peanut Butter Crunch Cookies

Makes 30 Cookies


1/4 cup Butter
1/4 cup Peanut Butter
1/4 cup white granulated Sugar
1/4 cup brown Sugar, packed
1/2 cup granulated Splenda
1 egg
1/2 tsp Vanilla extract
1/2 cup Flour (white or whole wheat)
1/4 cup Oatmeal, dry, uncooked
1/2 tsp Baking soda
1/4 tsp salt (optional)
1/4 cup Grape-Nuts cereal, dry


Prehead oven to 350 degrees.
Spray non-stick coating on cookie sheet.

In mixing bow, cream the butter, peanut butter, sugars and Splenda.
Beat in egg and vanilla.

Combine flour, oats, baking soda and salt in a separate bowl.
Gradually add to creamed mixture and mix well.
Stir in Grape-Nuts.

Drop 30 small rounded teaspoons 3 inches apart onto cookie sheet.
Bake at 350 degrees for 9 minutes or until lightly browned.
Makes 30 cookies.

Protein 1.2 grams

This comment is to address a few errors I made in this video. First, of course the baking powder and salt were 1/4 of a "teaspoon" not 1/4 of a "cup". Next, 5 x 6 = 30, and since I divided the dough into 6 piles instead of 5, which is what I intended, I should have made 5 cookies from each pile and not 6 cookies from each pile. Overall, this made very little difference, but made each cookie closer to 50 calories instead of the 56 calories given, so I wanted to let you know I did see the mistake as soon as I saw the video.              Thank you Karen. Yes, I believe that it is easier now for me to judge and accept small portions. Years of forcing Honesty upon myself has made the truth easier to recognize. I still have those OLD if a cookie is broken it should have fewer calories...i.e. less desirable = less value which should equal less calories...But NOW I immediately recognize those thoughts as fantasies.
