It turned out fabulous. I served my protion over roasted spaghetti squash. The rest of the family had theirs over wild rice pilaf.

This is what I eat and how I prepare my fish most days of the week. Sometimes I add broccoli instead of the pepper. I prepare chicken the same way. If I'm short of time, I use baking paper/micro bowl and cook it in the microwave. Really delicious! Thanks for your fabulous and informative website Phyllis.

rross, thank you for your kind words. Eating this way is clearly working for you. Congratulations on being so successful in Maintenance. Good idea about using baking paper and microwave cooking. I think I'll try that out soon, myself. <3

I make a similar dish all the time with a variety of fish on the grill... Never used mushrooms but will tonight.. I do like adding grape tomatoes and 1 tbs of white wine!!!

philhunting, Hope you enjoy the addition of mushrooms. It seems like to some like I put them in everything, but I'm very fond of them. Sometimes I also cook with a small amount of wine, but I actually prefer substituting broth because I'm not fond of the distinctive tastes that alcoholic beverages have. Grape tomatoes would make a beautiful dish, and I love tomatoes, but my personal preference is for my hot tomatoes to be more sauce-like. <3
